30 Days of JOY-Day 8: How to cook barley and some pantry inspiration!

From ABOUT.COM :Whole grain barley is a healthy high-fiber, high-protein whole grain. boasting numerous health benefits. When cooked, barley has a chewy texture and nutty flavor, similar to brown rice. Although soup is the most popular way to eat barley, you can use it like any other grain such as couscous or rice. Serve a curry or  stir-fry over barley instead of rice or make a barley pilaf.


Barley cooks the same as rice (YES IT'S EASY).... Just use a 2:1 ratio (2 cups water to one cup barley). Bring to a boil and then simmer for about 30 minutes.


Or you can simply add uncooked barley to any soup and cook until tender. 


I added barley to a leftover turkey soup and it was tasty!  Good luck!
