Sara's Sinful Chocolate Zucchini Cake


2 C Flour 
2 C. sugar
3/4 C. Unsweetened Cocoa powder
2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
4 eggs
1 1/2 C. Vegetable oil
3 C. Grated Zucchini
(walnuts, optional)  

Preheat oven to 350 degrees, Grease and flour a bundt pan

Combine all dry ingredients and mix. Next add eggs and oil and mix together well. Stir in zucchini by hand until well combined.  Pour into prepared bundt pan.

Bake for 50-60  minutes...Check with toothpick at the 50 minute mark. 
Cool completely before removing from pan 


Chocolate Frosting-
1/2 cup melted butter
1/4 cup cocoa
2T. milk
1t. vanilla
2 cups  Powdered sugar (maybe a little more until you have a good consistency)

In a small bowl combine butter, cocoa, milk and vanilla.  Mix with hand mixer until well-combined.  Add powdered sugar and mix until you have a silky creamy consistency.  Enjoy!
