Recipe of the Week

Here is a simple dinner..........

In your crock pot combine:

4 -Chicken breasts
1 -14 oz. can diced tomatoes 
1 - Small can green chilles 
1- Jalapeno diced 
8 ounces -Cream Cheese or Sour Cream

Heat on low for 8 hours or on high 3-4 hours.  When the chicken is fully cooked shred it with a fork and keep it on low until you are ready make quesadillas .  

Quesadillas-

Heat skillet and drizzle with olive oil. Then add a little sea salt.  Warm each tortilla in the oil and salt (this makes an average quesadilla taste AMAZING- my friend Natalie taught me this little secret).  Sprinkle shredded cheese on tortilla and then add chicken.  I like to add black beans too.  Top with other tortilla and cook on each side for 2 minutes. 

Serve with sour cream, fresh cilantro and diced tomatoes.  


This is an ideal recipe for a busy day.  I usually throw it all in the crock pot around 10:00 a.m and it is perfect for dinner!
